I've been on an Okinawan food kick lately, making goya chamburu and hirayachi, and noticing Okinawan foods on restaurant menus. What's your favorite Okinawan food? Do you include beniimo in your meals? It's a traditional staple there and widely available in the shops across Japan. Hirayachi is super simple - eggs, flour, tuna, and nira seasoned with salt and pepper.
